Avocado Smash with Balsamic Glaze

As in, you find a dish that hits all your taste buds just right, you could eat it over and over again without being bothered, and it’s basically your go-to in any restaurant.
Sound familiar?
That’s avocado smash for me — hands down!
Ever since I went vegan, savory foods have been my #1.
Goodbye sweet, tasty treats.
Hello salty, savory delights.
That means sweet breakfasts like pancakes, muesli, and even fruit just aren’t my thing anymore.
At least not in the morning.
Now that I’ve discovered the wonderful world of avocado smash, I’m pretty obsessed.
I had my first avocado smash in Melbourne, Australia a few years ago when I first moved down under.
It is such a basic concept, but topped with well-cooked, well-herbed mushrooms, the flavor and presentation really impressed me (also made me drool).
Ever since then, it became a staple in my diet and I’ve never looked back.
Avocado goes through ups and downs in the price here in Queenstown, but it’s always a treat to have no matter what.
Again, I could eat it every day and still see it as a treat — it’s just a make-Kelsey’s-mouth-happy kinda meal.
If you don’t already know, I’m also a big-time hot sauce lover.
Like hot sauce’s biggest fan, in fact.
I carry hot sauce with me everywhere I go and I have become known for my hot sauce addiction.
I added chili flakes to this smash in hopes that the spice level would be taken care of, but I ended up adding hot sauce anyways.
You don’t have to do this, by the way; only if you like spicy foods should you follow in my chili-induced footsteps.
AVOCADO SMASH WITH BALSAMIC GLAZE
INGREDIENTS
1/2 tsp garlic powder
1/2 tsp onion powder
1 tsp chili flakes (optional)
Salt & pepper to taste
1 avocado
6-8 cherry tomatoes
2 slices of your favorite bread
1/4 cup balsamic vinegar
1 tbsp maple syrup, brown rice syrup, or brown sugar
INSTRUCTIONS
Place the green goodness of an avocado into a bowl and dice into smaller pieces (it’s easier to smash that way).
Add the garlic powder, onion powder, chili flakes (optional), salt and pepper to the avocado and smash with a fork until desired consistency/chunkiness.
Dice cherry tomatoes in half or quarters and set aside.
In a small sauce pan, heat the balsamic vinegar on medium heat.
Stir in the maple syrup, brown rice syrup, or brown sugar.
Continue to stir until the sweetener is completely dissolved.
Lower the heat and stir regularly until the liquid has been reduced by about half.
Remove from heat and set aside to cool.
Place your bread of choice in the toaster.
When the toast is ready, spread the avocado mixture on it, place cherry tomatoes on top, then drizzle the balsamic glaze across the meal.
