Mint Matcha Malibu Latte
It's the naughty kinda drink that subs coffee for rum. Unleash your inner pirate.
WARNING: This is an evening latte, not a wake-up-and-make-every-day-before-work kind of latte.
In the summer, one of my favorite things to do is experiment making different cocktails. We actually didn't intend for this one to have alcohol in it, but that's the beauty of experimenting. Sometimes the greatest creations are mistakes or last-minute additions.
We were inspired by Minimalist Baker when we started making this lovely latte, but we kept changing things up from her original blend and ended up designing a mischievous Malibu mouth-waterer instead. That sentence is a mouthful!
One sip of this thing and you've just stepped off a plane in paradise. Believe me, it'll make your toes curl. A glass of this vegan goodness will mellow you right out and it's a hell of a lot cheaper than booking a flight to Tahiti (although, if you have the time & money, what are you still doing here reading this!?).
This recipe requires a bit of forethought and preparation as the ice cubes need to be frozen. Just a heads up about that one!

Mint Matcha Malibu Latte

INGREDIENTS
1 can coconut milk (frozen into an ice tray)
1/2 cup vanilla almond milk
1/2 cup fresh mint (loosely packed)
1/2 tsp green Matcha powder
1 tsp vanilla extract
2 tsp maple syrup
1/2 cup fresh baby spinach (loosely packed)
1 tbsp cacao nibs
60mls/2 oz Malibu Coconut Rum

INSTRUCTIONS
1. Freeze coconut milk in an ice-cube tray overnight.
2. Add all ingredients except Malibu to your blender.
3. Blend until "milk" cubes have been processed.
4. Stir to check & taste before adding Malibu Rum; stir once more.
5. Garnish with mint and cacao nibs.
6. Enjoy your naughty creation!
